The major dried grape producer countries are Turkey and the USA, ranking first or second depending on the year. In the USA the major variety for drying is Thompson Seedless. If the seedless grapes are dried after being dipped in an alkaline solution, usually potassium carbonate, to quicken water loss, they are lighter in color and named ‘Sultanas’.
Grapes dried without any pre-treatments, also called ‘Natural’ have a dark reddish-brown color.
Those which are sulphur treated have a light golden color.
