Pumpkin seeds, also known as “Pepitas”, were a favorite food for the ancient Aztecs in Mexico and are still around today as a healthy snack choice. Toasted, salted, or spiced, these seeds may be used in salads, soups, or in breads, among many other options. Rich in protein, these crunchy seeds are also good sources of the antioxidant vitamin E and oleic acid, which helps to reduce LDL “bad cholesterol” and increase HDL “good cholesterol”.
