Native to China and called “Eggs of the Sun” by ancient Greeks and Romans, the brightly colored apricot is now mostly produced in Turkey, which boasts over 80% of world production. Malatya province in Turkey produces 50% of apricots in Turkey, around 90% of which are sundried. A fantastic addition to cereals and pancakes, dried apricots also contribute color and flavor to roasted vegetables and poultry dishes. As part of a healthy diet, they are an excellent source of vitamin A, which helps maintain a robust immune system.
